In my cooking I use combinations of a total of 24 actual seasonings, herbs and spices.
The 13th Spice is not shown above but is nestled right in the middle of the 24 and brings the list to 25.

The first 12 – Onion, scallion, thyme, garlic, ginger, scotch bonnet pepper, pimento, clove, paprika, turmeric, cayenne pepper and sea salt.
The 13th Spice ?
The second 12 – Cinnamon, rosemary, cumin, coriander, basil, nutmeg, coconut milk, cardamon, oregano, parsley, vanilla and anise.
The 13th Spice is the single most important ingredient to me. To some cooks it’s a super ‘food’. Some may even say it’s a secret ingredient; but, it’s no secret because everyone knows what it is and many people use it daily to ‘spice’ up the delicious foods they prepare.
