Jamaican Pickled Saltfish (salted codfish) is a nice appetizer for any gathering of friends.

We had some new friends-a Japanese family of four-over for dinner and I made this. It was a huge hit. It’s very easy to make and goes well with crackers. Enjoy! ٩(^ᴗ^)و
1lb Salted Codfish (boiled, deboned and shredded)
1 medium onion (Chopped)
1 medium cucumber (de-seeded and diced)
½ of a large red bell pepper (diced)
½ of a large yellow bell pepper (diced)
3 cherry tomatoes (de-seeded and diced)
½ cup white vinegar
1 pinch of thyme
½ scotch bonnet pepper (de-seeded and chopped)
Toss all ingredients in a non-plastic bowl and allow marinating in the refrigerator for 30 minutes before serving. Serve with crackers. Serves 8
