JERK-CHICKEN AVOCADO SALAD

This is very easy to make. You can use baked, fried or jerked chicken to make it. It’s great for breakfast, for brunch or for a late lunch.

Feel free to substitute the white bread for something else. Enjoy! ٩(^ᴗ^)و

Ingredients
1 leg & thigh (jerk-chicken, de-boned) or breast, if you prefer white meat
½ of a medium tomato (chopped)
½ of a medium green pepper (chopped)
½ of a small cucumber (de-seeded and chopped)
¼ of a medium avocado (peeled and sliced)
1 Tbsp olive oil
1 Tbsp shredded cheese (optional)
2 Tbsp mayonnaise
Salt & pepper to taste

Method
In a large bowl, cut the chicken into bite sized pieces. Add chopped tomatoes, green peppers and sliced cucumbers. Add sliced avocado and a little olive oil. Add shredded cheese, a little mayonnaise and salt & pepper to taste. Mix well and roll in a leaf of lettuce, or make sandwiches with fresh bread.
