Jamaican Salted Mackerel Rundown

It is also called MACKEREL RUNDOWN since we use pickled mackerel to make it. Here is the recipe. Enjoy! ٩(^ᴗ^)و

Ingredients
2 dried coconuts (fleshed, chopped and blended) 
or 1 can of coconut milk (400ml)
2 cloves of garlic (chopped)
2 sprigs of thyme (stems removed)
or half a teaspoon dried thyme leaves
6 cups of water if you use fleshed coconuts
or 4 cups of water if you use canned coconut milk
2 stalks of scallion (chopped)
2 small onions (chopped)
2 lbs of salted mackerel (boiled, deboned and separated into pieces)
2 medium tomatoes (chopped)
1 hot pepper, Scotch bonnet or Habanero (deseeded & chopped)

Method
Boil the coconut milk and water in a large frying pan until it starts to thicken a little. Add the fish, onion, garlic, scallion, tomatoes, hot pepper and thyme and stir lightly. Cover and cook for 10-15 minutes on a medium heat. If necessary (if the mackerel was boiled for too long and is no longer salty), add salt to taste. The finished product is supposed to be a thick sauce. Serve with boiled ground provisions (yam, potatoes, pumpkin, dasheen, green bananas) and dumplings. (Serves 4-5 people)
